Creamy Coconut Porridge with Cinnamon Stewed Apple


This porridge is definitely one of my favourite breakfasts of all time. Pretty big statement, I know. But once you taste it, you'll see where I'm coming from! It is just so ridiculously creamy and sweet, it warms your whole body up like a big cuddle with every mouthful!

Creamy Coconut Porridge with Cinnamon Stewed Apple

Serves 1

Ingredients

  • ½ cup rolled oats

  • 2 or 3 tablespoons coconut milk

  • 1 cup boiling water

  • 1 teaspoon cinnamon

  • 1 green or red apple (I prefer green, but whatever floats your boat!)

  • 2 teaspoons coconut oil or butter

  • 1 teaspoon brown/coconut sugar (optional)

  • 1 teaspoon pepitas (pumpkin seeds)

  • 1 teaspoon sultanas/raisins/1 date chopped up

  • A couple of walnuts broken into pieces

Peel and cut your apple into bite size pieces. Put to one side.

Place your oats, coconut milk, and boiling water in a pot, stirring often to ensure a beautiful, creamy consistently.

In between stirs, place your apple pieces into a frying pan with the coconut oil/butter, cinnamon and coconut/brown sugar (if using) and stir everything around until the apples are evenly coated, caramelised and soft.

Continue stirring the oats until you have your desired consistency. I like mine creamy, but not gloopy! It should have some texture, but not cooked until it’s stodgy. (Unless that’s how you like it! No judgements here.)

Pour the oats into a bowl and top with apples. Sprinkle with sultanas, walnut pieces and pepitas and enjoy!
