Mexican Pizza with Spicy Beef, Guacamole, Greek Yoghurt & Salsa

If there’s one thing I know with complete and utter certainty, it’s this: I will never, ever get sick of Mexican food. I mean, how could you?! Have you ever even tried a burrito? The flavours in Mexican food are so incredible and the combinations are endless!

This recipe combines my love of Mexican food with my first love: pizza. Put them together and you’ve got a match made in heaven and a delight for the tastebuds. This is a great Friday or Saturday night dinner because it feels like a real treat, but it doesn’t take too long to make. All you have to do is a bit of chopping here, some frying and stirring there and you’ve got a tasty dinner in no time at all!

I like to serve this with my sweet potato wedges and guacamole. After all, there’s no such thing as too much guac, right?!

Mexican Pizza with Spicy Beef, Guacamole, Greek Yoghurt & Salsa

Serves 4

  • 2 pieces of Lebanese pita bread

  • 2 tbsp tomato paste

  • 1 cup grated cheddar cheese

  • 1 spanish onion

  • 500g beef mince (grass fed and organic if possible)

  • Olive oil

  • ¼ cup beef stock

  • 2 tablespoons guacamole

  • 2 tablespoons salsa

  • 2 tablespoons greek yoghurt or sour cream

Spice mix:

  • 1 tbsp chilli powder

  • ¼ teaspoon garlic powder

  • ¼ teaspoon dried oregano

  • ½ teaspoon paprika

  • 1 teaspoon ground cumin

  • 1 teaspoon salt

  • 1 teaspoon pepper

(Alternatively, you can buy a taco spice mix from the supermarket. I do all the time! A Coles or woollies brand will only set you back a dollar or two, and there are no nasty additives. There’s no shame in taking a shortcut here and there!)

Preheat oven to 180 degrees Celsius.

If you're serving the pizzas with sweet potato wedges, prepare these and pop them in the oven first.

Then, chop and dice Spanish onion and place in frying pan on medium heat with a good glug of olive oil. Cook and stir until the onion becomes soft and translucent (about 5 minutes).

Next, add the beef mince, using a fork to separate it into small pieces. Stir until it has browned. Add the spice mix and stir. Finally, add the beef stock, give it another stir, and turn the heat down to low. Pop the lid on the pan.

In the meantime, prepare the pizza bases. Spread a tablespoon of tomato paste on each pizza base and sprinkle cheese on top.

Using a wooden spoon spread the mince on the top of the pizza bases. How much to use is up to you! You can use the whole mixture on the 2 pizzas, or keep some for leftover lunches.

Place the pizzas in the oven for about 8-10 minutes, until the cheese has melted and the bases are nice and crispy.

While the pizzas are crisping up, prepare the salsa and Greek yoghurt (or sour cream) and make the guacamole.

Take the pizzas out of the oven and cut into slices. Finally, top the pizzas with guacamole, salsa and Greek yoghurt/sour cream.

Serve with sweet potato wedges and more guacamole and enjoy!
