Easy Pea-sy Lunch Bowl


Peas get such a bad wrap, you guys. Everyone's all "ew, peas." Well, you know what everyone? Peas are delicious. You just gotta try this lunch bowl to find out for yourself!

It's super duper easy to make and takes less than 10 minutes to throw together. AND it's delicious. My favourite part is fanging a whole bag of spinach in a frying pan and watching it shrink to 1/10 of its size in a matter of minutes. Spinach, you sly dog, you!

Plus, it's super healthy. The whole bowl boasts a buttload of protein, iron, fibre and vitamins. What's not to love?!

Easy Pea-sy Lunch Bowl

Serves 1

Ingredients:

  • 1 free range egg

  • ½ bag spinach

  • ½ cup frozen peas

  • 2 teaspoons goats cheese (add more if you like, sometimes I do!)

  • ½ lime

  • Salt and pepper

  • Olive oil

  • Dukkah (optional)

Fill a small saucepan with boiling water to poach the egg in. Pop the lid on and wait for the water to come to the boil.

Then, drizzle some olive oil in a frying pan, adding the spinach in. Toss with tongs until wilted, and place in a serving bowl.

Add the frozen peas into the frying pan, using the tongs to stir them around.

Meanwhile, crack the egg into a small cup (I find it makes it easier to pour it into the water to poach)! Swirl the boiling water in the saucepan into a whirlpool motion, and then drop the egg in. Poach for 2 minutes, transferring it to a paper towel afterwards to absorb any water.

Take the peas off the heat and using a fork, mash them together. Add the goats cheese and mash again, until they’re smooth but still have pea like texture.

Place the poached egg next to the spinach in the bowl. Then add the mashed peas and goats cheese. Drizzle with lime juice, sprinkle dukkah over the egg (if using), season with salt and pepper, pop the glorious egg open to expose #datyolk and finally, enjoy!
